Elevated Japanese dining crafted by the forces of nature, at Sushi Kaiyo.

Press Release: 13.12.2021

Sushi Kaiyo is the latest addition to the growing portfolio of Boga Group. Founded in 2002, Boga Group is well known as one of Indonesia’s leading food and hospitality groups with over 150 restaurants found across the nation. Respected brands such as Bakerzin, Pepper Lunch, Paradise Dynasty are just to name a few.

In partnership with the award-winning international branding and hospitality design agency, BrandWorks Studio (Melbourne, Australia) and their design office in Jakarta, The Boga Group is set to create a new benchmark in Japanese cuisine that heralds a new, innovative approach to all-day dining. ‘Kaiyo’ means ocean water and the dining concept is inspired by nature in all its forms – Earth, Wind and Fire. Sushi Kaiyo invites patrons to rediscover the forces of nature on plate, by showcasing the sheer beauty of food meticulously sourced, prepared and served at the table.

Located in the lobby area of Lippo Mall Puri Jakarta, Sushi Kaiyo unlocks a potential that has not been seen before, by transforming a generic three-storey space into an immersive all-day dining destination, comprising a street-facing retail area, Izakaya-style sushi bar, three VIP rooms, interactive children’s play area and a show kitchen with a multi-tiered seating gallery. Together, these dining experiences are interconnected and woven together by an awe-inspiring suspended staircase, designed in collaboration with architecture studio AT-LARS. Symbolising a “stairway to heaven from the depths of the ocean to the lightness of the sky”, art imitates life with Sushi Kaiyo drawing you towards the surface just as the sun flickers below the water.

Inspired by the depths of the ocean and Japan’s obsession with purity, perfection and craftsmanship, the menu is an experience to behold. Developed by highly acclaimed Master Chef Edwin Yau (co-founder of Daikanyama and Wondermama in Kuala Lumpur) in collaboration with BrandWorks Studio, diners will expect surprising elements and delightful impressions at every turn.

The menu runs far and wide in range and eating styles, from the purity of traditional Aburi fire-torched wagyu bowls to unexpected food pairings such as Petai with Sambal with your sushi roll. The menu comes to life with signature dishes presented with creative flair and showmanship to evoke all five senses.

Hot tip – have your phone camera ready before your food arrives on the table, or you will miss the drama of fire and spectacular plumes of smoke as the food is revealed before your very eyes.

If you’re in the mood for breathtaking and thrilling surprises, then order the ‘Treasure Box’, Sushi Kaiyo’s ode to Omakase, where Chef Maeda (Sushi Kaiyo’s Executive Chef) hand-selects the most freshest seafood and sushi of the day, whilst beautifully presenting it within pillowing clouds of liquid nitrogen, emanating from the luxe wooden box.

With a kaleidoscope of Japanese dining experiences harmonised within the modern aesthetic of Sushi Kaiyo’s Japandi (Japanese-Scandinavian) minimalist design, the brand-to-table experience honours the attention to detail, materiality, artisan and quality of design. The attention to craft is seen and touched by the art of Shibori tie-dying applied to the seating, handmade pottery and custom ceramics for the table and Japonisme-influenced wall murals and graphics to name a few. All of which seamlessly finds its way into the menu design, signage, way-finding and social media.

Sushi Kaiyo brings the mystery of the ocean into a celebratory gesture of joy and food appreciation for the next generation of diners in Indonesia.

Sushi Kaiyo – now open.
